Spicy Omelette Wrap
Ingredients:
1 large onion, finely sliced
1 leek, thinly sliced
1 pepper, thinly sliced
6 medium mushrooms, chopped
1tsp ground coriander
1 tsp ground cumin
2 garlic cloves, crushed or finely chopped
1tsp mild chili powder
4 -6 eggs, beaten
Fry Light
Method:
Spray a large frying pan, saucepan or wok with Fry Light
Place the vegetables and spices into the pan and mix thoroughly
Fry them altogether until the vegetables are soft
Place a small amount of the egg into an omelette pan, and tilt the pan until the bottom is covered
Cook the egg on both sides (or fry one side and place under the grill to cook the top)
Slide the wrap onto a plate and fill with the veg mixture
Serve with kale, salad or any other speed food you like
