Sweet Potato & Lentil Winter Soup
Ingredients:
4 large sweet potatoes, peeled and diced
1 large onion, chopped
3 cloves garlic, crushed
4 large carrots, peeled and diced
Half a medium butternut squash, peeled and diced
3 large parsnips, peeled and sliced
1 red pepper, chopped
1 cup red lentils
2 litres stock – chicken works best
Handful of chopped parsley
Method:
Fry the onions and garlic together with Frylight. Add the rest of the ingredients with the stock and simmer for approximately one hour. Blend until smooth and sprinkle with fresh parsley.
