Veggie Quorn Bake
Ingredients:
Small butternut squash, diced
Large, red onion, roughly sliced
3 mixed peppers, roughly sliced
2 packs of frozen quorn sausages
Frylight
2 level tablespoons wholegrain mustard
2-3 garlic cloves, finely chopped
1 tspn sweetener
1 tablespoon cold water
Method:
Heat the oven up to 180c. Place the diced butternut squash into a baking dish, spray with Frylight and bake for 15 minutes.
Add the onions and peppers, sprinkle the garlic over the top, spray with Frylight and bake for another 15 minutes.
In the meantime, mix the mustard, sweetener and cold water together in a large bowl. Place the sausages in the bowl and toss thoroughly to cover them with the mustard mixture.
Place the coated sausages on top of the veg dish and bake for 20 minutes, turning the sausages half-way through.
Serves: 4

Difficulty: Moderate
You can sprinkle some dried or fresh dill over the top before serving. 🙂
