Chocolate Coconut Truffles
Ingredients:
55g low fat olive spread (3 syns)
3 tbsp of vanilla light soya milk
2 x sachet of chocolate Options (2 syns per sachet)
5 ½ tbsps sweetener
140g fine coconut
Method:
Mix Options into a thick paste with warm water.
Mix spread, milk and chocolate Options paste in a saucepan until melted and binded.
Add the sweetener and coconut.
Roll into balls and leave to set in fridge.
Sprinkle with sachet of Options and sweetener and serve.
