Syn-Free Egg & Mushroom Risotto

Ingredients:
Packet of free savoury rice, any flavour
Fry Light
Large onion, chopped
Third each of red, green and yellow peppers, diced
6-8 closed cup mushrooms, sliced
3 eggs, beaten
Seasoning to taste


Method:
Put the rice on to cook.

In the meantime, fry the onions and and peppers in Fry Light for 5-10 minutes until soft, stirring regularly.

Add the mushrooms and fry for another 2 -5 minutes.

Add the beaten egg and stir constantly until the egg is cooked.

When the rice is cooked, drain and add to the egg mixture. Stir thoroughly.

Cooking Time: 30 minutes
Difficulty: Moderate

Optionally, serve with baked potato, salad, steamed asparagus and top with a poached egg

  1. I tried this recipe but didn’t have any mushrooms, so I substituted them with sliced leeks and chopped courgettes – yummy!

  2. This is lovely and a nice change to usual meals. Will definitely give it a go 🙂
