Fat free fromage frais
Garlic powder or cloves, crushed
2 shallots, finely chopped
Sweat the shallots in fry light until soft and golden into a syrupy consistency
Add the garlic powder or cloves (as much or little as you want)
Sprinkle desired amount of curry powder into the mixture
Slowly add the chicken stock, continuing to stir to ensure it does not burn
Simmer until reduced by 2/3 into a thick, syrupy texture (it should stick to the back of your wooden spoon and coat it like honey)
Remove from the heat and stir in the fromage frais gently and gradually while stirring the mixture until at desired consistency.
Serve with SW chips or chicken and rice.
